Eggs & Tings

For me, breakfast is the hardest meal to figure out. I don't always go for the most healthiest option I will say but I do try sometimes. Today I felt like something filling yet small. I didn't feel like stuffing myself as I usually do in most meals. I just wanted to feel comfortable. So I decided to make scrambled eggs with whatever veggies I had in my fridge. Again with most of (if not all) of my recipes, there are no real measurements. I just usually eyeball everything I cook.

2 Eggs

Cherry Tomatoes

Spanish Onion

Green Pepper

Mushrooms

Garlic

Ground Pepper


| HERE'S WHAT TO DO |

No real rules here but I like to sauté my veggies a little to bring out the flavours. I then add in my eggs and just scramble them until cooked. I usually like to add some cheese to this as well but I didn't have any (sigh). 

I paired this little meal with my Breaky Smoothie
